You can begin the process before the day of your meal prep. For example, marinate chicken breasts and place in the freezer so they’re ready for the next day. You can also save time by stocking up on frozen vegetables which are already diced and just need cooking.

Chicken Shawarma and Sweet Potato Fries 

Ingredients

  • 2 pounds boneless skinless chicken breasts, cut into bite size chunks
  • 1 tablespoon honey
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 2 teaspoons kosher salt and pepper
  • juice of 2 lemons
  • 4 cloves garlic, minced or grated
  • pinch of crushed red pepper flakes
  • 5 tablespoons olive oil
  • 2 sweet potatoes, cut into matchsticks
  • 1 bunch asparagus, ends trimmed
  • 4 cups cooked couscous or quinoa
  • 1/2 cup pitted kalamata olives and oil packed sun-dried tomatoes, oil drained
  • crumbled goat cheese, shredded lettuce, avocado, sliced cucumbers, pickled red onions, pine nuts, lemons, mint, and or cilantro, for serving

Recipe

  • Combine the chicken, honey, paprika, cumin, salt, pepper, lemon juice, garlic, crushed red pepper flakes, and 2 tablespoons olive oil. Add to a zip bag, seal and refrigerate for up to 12 hours.
  • Preheat the oven to 425 degrees F.
  • Add the sweet potatoes on a large baking sheet. Toss with 2 tablespoons of olive oil, salt and pepper. Transfer to the oven for 20 minutes, then flip, and continue baking for 20 minutes.
  • Place the marinated chicken on a large baking sheet and add to the oven until the chicken is cooked.
  • Divide the couscous amongst around 6 storage containers. Arrange the chicken, sweet potato, asparagus, olives, and sun-dried tomatoes on top

Greek Couscous Salad

Ingredients

  • 2 packages of couscous mix – roasted garlic and olive oil flavour
  • 1 cucumber, chopped
  • 3 bell peppers, chopped
  • ½ red onion, diced
  • 1 cup cherry tomatoes
  • ½ cup Italian parsley
  • 2 cans chickpeas
  • Feta cheese
  • 1 lemon

Salad dressing:

  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • Sea salt and freshly cracked pepper

Recipe

  • Prepare the couscous mixture and add in the seasoning mix. Prepare the vegetables whilst waiting for this.
  • Drain and rinse the chickpeas.
  • Add the dressing ingredients to a mason jar. Seal and shake until everything is combined.
  • Add the couscous to a large bowl and leave to cool. Add in the vegetables and chickpeas. Sprinkle with feta cheese and squeeze lemon juice over the top.
